Low Carb Plum Cobbler

This Plum Cobbler may be low-carb and keto friendly, but that doesn’t make it any less delicious! Try adding some of your favourite vanilla ice cream on top to make a perfectly balanced dessert!


  • 2 cups finely ground almond flour
  • 2 large eggs
  • 1/2 cup softened butter or Becel sticks
  • 1/3 cup Swerve sweetener
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3 Tbsp coconut flour
  • 4-5 plums, cut up 2 peaches, cut up


  1. Preheat oven to 350 degrees.
  2. Cut up all fruit and place in a large square baking dish.
  3. Sprinkle with 1 Tbsp Swerve sweetener.
  4. In a food processor add the almond flour, coconut flour, baking powder and soda as well as sweetener. Pulse to mix.
  5. Cut up butter and drop into food processor as it is running.
  6. Add the eggs and mix well.
  7. Use a spatula to drop batter on top of fruit and spread out.
  8. Place baking square on a cookie sheet.
  9. Bake in oven for 20-25 minutes.
  10. Turn heat off oven and let it rest in oven for 1/2 hour.
  11. Remove and serve.
